Quinoa Blueberry Pudding

Serves 6

Ingredients

1 cup dry quinoa
2/3 cup water
2 cups apple juice
1 tablespoon lemon juice
1 teaspoon ground cinnamon
1 cup fresh or frozen blueberries

Directions

Rinse quinoa before cooking to remove the coating of a bitter substance called saponins.

Bring water and apple juice to a boil.

Stir in quinoa, cover, reduce heat and simmer for 10 minutes.

Add cinnamon, lemon juice and blueberries.

Simmer for about 5 minutes more.

Refrigerate until serving time.

May top with yogurt, cream or other topping of your choice.

Stir in ½ cup walnuts or any other nut you prefer.
